Savor New York Asian Noodles

Easy, quick and nutritious. This version is vegetarian, but cooked chicken or shrimp is a simple addition, if you like.

One 8-ounce package rice noodles
½ bottle of Well Dressed Foods Spicy Asian Peanut Sauce
1 tablespoon rice vinegar
1 teaspoon soy sauce
1 tablespoon olive oil
One 16-ounce bag of frozen Asian vegetables, or four cups mixed fresh veggies (i.e. broccoli, onions, peppers, mushrooms, celery- be creative!)
¼ cup chopped peanuts

Soak noodles in hot water for about 20 minutes. In a small bowl, Stir Spicy Asian Peanut Sauce together with vinegar and soy sauce.
Heat olive oil in a large skillet and stir-fry vegetables until nearly done.
Drain noodles and add to vegetables. Pour sauce over all and stir to combine. Cook a few minutes, until heated through. Top with chopped peanuts. |
